HAND SANITISER, the Good Stuff. The shops have run out, you've none in the house and you can't even get any online. The next best thing is to MAKE YOUR OWN.
Sanitises 2 or maybe 12 if you're weak - in about 45mins to an hour-ish.
- 280g Plain Flour
- 150g Caster Sugar
- 80g of Best quality, unsweetened Cocoa Powder
- 0.5 tsp Mixed Spice
- 1.5tsp Baking Powder
- 1.5tsp Bicarbonate of Soda
- 125g Dark Chocolate chips or chunks
- 100g of Juicy Raisins
- 180ml Milk
- 90ml Vegetable Oil
- 1 large Egg
- 1.5 tsp Vanilla Extract
Step by Step.
> Pre-heat your oven to its highest setting (temperature will be reduced when muffins go in). Prepare your muffin tin by lining with paper cases and set aside.
> Sift together into a bowl: flour, sugar, cocoa powder, mixed spice, baking powder and bicarbonate of soda. Add chocolate chips/chunks and raisins and set aside.
> In another bowl combine all your wet ingredients: oil, egg, milk, extract, and mix well.
> Add the wet mix into the dry mix and fold together until just mixed – DO NOT OVER MIX!!
> Straight away spoon your mixture into your muffin cases so they are each 3/4 full and place in your oven on the middle shelf, reduce temperature to 170 C / Fan 150C and bake for 30 to 35 minutes until the tops are firm to the touch.
MOST IMPORTANT STEP. >> While the muffins are baking, wash ALL the bowls and utensils you used in really hot, very soapy water and dry them on a clean, fresh from the linen cupboard towel and your hands will be sanitised in time to enjoy the muffins.
> Let the muffins sit in the tin for 1 to 2 minutes after you take them out of the oven, place them on a cooling rack until cool.
TIPS - Place a roasting tray or any ovenproof container half full of water on the bottom shelf of your oven when baking your muffins; it will help keep them really moist.
To help your chocolate chips keep their shape in the muffins, freeze them before using.
MOST IMPORTANT! Remember to only stir your mixture about 15 times MAX; this is the key to great muffins. Don't be tempted to over-stir no matter what your mixture looks like
