FETA AND SPRING ONION BOUIKOS




A simple (very simple) little snack that is a cross between a Cheese Scone and a Cheese Puff with a bit of Cheese & Onion Pie thrown in for good measure.  Start to finish, (assuming you have the ingredients to hand) you could be eating them within half an hour of thinking about making them.

Makes 24 bite-size snacks - in about 30 mins

  • 50g cold Butter
  • 40g mature Cheddar cheese, grated
  • 40g Feta, crumbled
  • 100g plain Flour
  • A pinch of Salt
  • 50ml Sour Cream or Natural (Greek) Yogurt
  • 1 teaspoon Nigella (Black Onion) seeds
  • 2 Spring Onions, chopped

Step by Step.
Preheat the oven to 200˚C and line a baking tray with baking parchment.
Cut the cold butter into small dice-sized small cubes - no more than 1cm square.
In a stand mixer with a paddle attachment, or by spoon/hand (easiest way), combine all the ingredients until JUST combined. Do not overwork the mixture.
Tip the dough on a lightly floured surface and floured hands to shape the dough to a rough rectangle about 2cm thick. Cut the dough into triangles using a lightly floured knife. Do this by cutting the dough twice lengthways. Then slice across three times (making 12 rectangles) then cut each rectangle diagonally to make triangles.  At the end of the day, cut them into any shape you want and make 12 larger ones if you want - just remember to adjust cooking time as the pieces will be (obviously) bigger and need slightly more cooking - but not a lot.  12 pieces may only need another 3 to 4 mins.
Place on the baking tray and bake for 10 minutes. Turn the tray around, reduce the oven to 180˚C and bake for a further 6-8 minutes, or until golden.  Remove from oven and let them cool on the tray a bt before moving them onto a plate.  Eat them warm or cooled but they are best eaten within a few hours.

Variations.
- Change the Cheese to suit yourself.  Mozzarella, Gouda, Edam, Blue Cheese...
- I've used Self Raising flour as well and it gives a 'fluffier' texture - it's a matter of taste.
- Use crushed Fennel or Anise seeds instead of Nigella.
- Add some crushed Pistachios instead of Spring Onions.
