SPAGHETTI PIZZA or PASTA FRITTATA


Originally (so they say) a way to use leftover pasta, this simple dish is a great snack or as part of a main course.  It has Pasta, Cheese, Eggs - what's not to love.  Have it with a Steak instead of Chips and... heaven.

Each portion has 200 Calories - 19g Carbs, 9g Fat (4g saturated), 10g Protein 1g Fibre and 1g Sugar.

Serves 8 as a snack or 4 as part of a main course - in about 45 mins.
  • 200g of uncooked spaghetti
  • 4 Eggs
  • 100g of block Mozzarella Cheese (the stringy, pizza type) cut into small, 1cm cubes.
  • 25g of freshly grated Parmesan Cheese
  • Salt, Pepper, Herbs and Garlic Powder - whatever suits your taste buds.
  • A couple of tablespoons of Olive Oil for frying.

Step by Step.
Overcook the Spaghetti in a large pan of boiling water for a couple of minutes longer that the packet suggests.  If the instructions are 10-12 mins then go for 12 to 14 mins.  Drain it and leave to cool a bit.  In a large bowl, add the Eggs and beat lightly with a fork.  Add the Cheeses, Salt and Pepper, some dried or fresh herbs and some Garlic powder.  Mix everything together well.


Add the cooked Pasta and mix well so all the Pasta is coated with the egg mixture.


Tip the lot into a suitably sized frying pan with half the oil (I use an 8 inch one as this give you a deep pie) and spread out evenly, pushing down the edges for form it.  Fry very gently for a few minutes until the bottom turns golden brown.  This takes between 5 to 10 mins depending on you frying pan and the heat - you want to cook it slowly so it cooks through.


Flip to cook the other side.  A 2nd frying pan comes in handy here or slide it out onto a plate and then put the frying pan back on top of the uncooked side and flip over.  Continue to cook until golden brown and cooked through.  Leave to cool in the pan a bit then slide out onto a plate or board.


You can eat it right away or leave it to cool.  Slice and tuck in.

Variations.
- Use any pasta you have in the cupboard.
- Use more eggs if you want it more like a 'Frittata'.
- Fresh Basil is great in this if you have it around.
- Use different Cheeses.  If it works on a toasty, it'll work in this.  Go Blue.
