Homemade Energy Snacks with endless variations. This recipe has, per ball -
137kcals, 4g Protein, 7g Fat (1g saturates) 13g Carbs (7g Sugars) and 3g Fibre.
Variations obviously change that but it's easy to work out the amounts.
Makes 12 x 30g balls - in about 15mins + Chillin' time.
- 130g of Pitted Dates (Medjool Dates work best as they are juicier otherwise soak your dates for a hour in water)
- 100g of Ground Almonds
- 80g of Rolled (Porridge) Oats
- 35g of Peanut Butter
- 15g of Raw Cacao Nibs
Step by Step.
Put all the ingredients into a Food Processor with the chopping blade fitted. Process until the mix is ground as fine as you can get it. This may take 2 to 3 mins. Stop occasionally and scrape the sides down to make sure it is well mixed. When done, tip the mixture into a large bowl and make sure everything is well ground and mixed. Form into balls of 30g and the store in a sealed plastic tub in the fridge for a few hours until chilled and set. Keep in the fridge for up to a week or more.
Variations.
Endless as long as you consider that they have to be formed into balls so need to be moist enough to stick together. Change the nuts to Walnuts or add half nuts half desiccated coconut, etc.
